Easy Zucchini Bread

- 2 cups all-purpose baking mix
- 1 1/2 cups shredded zucchini
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 3 eggs
- 2 tsp. ground cinnamon
- 1 tsp nutmeg
- 1/2 cup chopped nuts
Heat oven to 350. Grease and flour a loaf pan.
Beat all ingredients in medium bowl with electric mixer on low speed for 30 seconds. Beat on medium speed for 1 minute, scraping down sides of bowl often. Pour into loaf pan.
Bake 50 to 55 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes. Invert onto a plate. Place top of bread up on a wire rack to finish cooling.
